Keto Kheer | Payasam
A keto version of kheer that is accomplished by replacing the traditional rice with chia seeds that are soaked for 15 minutes and using monk fruit sweetener instead of sugar.

Instructions
In a small bowl put 1/4 cup chia seeds in 3/4 cup of water. Let is soak for at least 15 minutes.
Then heat 1 cup of heavy whipping cream and 1 cup of almond milk on pot on stove on medium heat stirring occasionally.
Add 1/3 cup monk fruit sweetener.
Then, when it just start to bubble add the chia seeds
Then stir occasionally until until it bubbles right before boiling.
Add 2 tbsp crushed almonds
Then add 2-3 strands of saffron. Stir continuously and turn down heat to prevent it from boiling, if needed.
Then cook until it starts boiling.
Refrigerate for 30 minutes before serving.
Notes
If chia seeds form lumps, use spoon to break them apart by pushing down on them while cooking.
While cooking, prevent it from getting to boiling by stirring and turning down the heat, if needed.
Refrigerate for at least 30 minutes before serving.
Best enjoyed chilled.
