Keto Kheer | Payasam

A keto version of kheer that is accomplished by replacing the traditional rice with chia seeds that are soaked for 15 minutes and using monk fruit sweetener instead of sugar.

  • In a small bowl put 1/4 cup chia seeds in 3/4 cup of water. Let is soak for at least 15 minutes.

  • Then heat 1 cup of heavy whipping cream and 1 cup of almond milk on pot on stove on medium heat stirring occasionally.
  • Add 1/3 cup monk fruit sweetener.

  • Then, when it just start to bubble add the chia seeds

  • Then stir occasionally until until it bubbles right before boiling.
  • Add 2 tbsp crushed almonds

  • Then add 2-3 strands of saffron. Stir continuously and turn down heat to prevent it from boiling, if needed.

  • Then cook until it starts boiling.
  • Refrigerate for 30 minutes before serving.

Notes

  • If chia seeds form lumps, use spoon to break them apart by pushing down on them while cooking.
  • While cooking, prevent it from getting to boiling by stirring and turning down the heat, if needed.
  • Refrigerate for at least 30 minutes before serving.
  • Best enjoyed chilled.
