Keto uttapam is a popular South Indian breakfast dish that is made keto friendly by swapping out the traditional dosa batter with low carb ingredients like almond flour and coconut milk.

Cooking Uttapam
7tspolive oil1 tsp to start and 1 tsp for each uttapam around the edges
Instructions
Uttapam Batter
Whisk in a bowl add 1 1/4 cup almond flour, 1 tsp baking powder, 1 pinch of salt and 1/4 tsp monk fruit sweetener.
Then add 1 tbsp olive oil and 1 cup coconut milk. Then mix well.
Vegetables
Then in a bowl mix 1/2 cup chopped onions, 1/4 cup chopped tomatoes, 4 chopped green chilies, 1 tbsp chopped cilantro and 5 chopped curry leaves. Set aside.
Cooking Uttapam
Then heat pan on stove on medium heat. Add 1 tsp olive oil.
Then add about 3-4 tbsp of batter on pan. Then top with 1-2 tbsp of vegetable mix. Sprinkle olive oil (1 tsp) around edge of uttapam while cooking.
