fenugreek leaves

turmeric

chili powder

coconut
grated

tsp
salt
adjust to taste
Instructions
Place a pan on stove top on medium heat
Then add 3 tbsp olive oil.
Then add 1/2 tbsp mustard seeds and heat until is starts popping.
Then add 1 1/2 cups of finely chopped onions. Stir intermittently and cook until soft.
Then add 3 roughly chopped green chilies
Then add 1/2 tsp turmeric, 1/2 tbsp chili powder and 1/2 tsp salt (adjust to taste).
Add 1/2 cup grated coconut.
Stir and mix well.
Then add the finely chopped fenugreek (methi) leaves and turn the heat to low. Mix well
Cover with lid and let it cook for 2 minutes.
Remove lid, stir well and cover with lid again. Cook for another 2-3 minutes.

Notes
Fenugreek leaves have a bitter taste so finely chop right before cooking to minimize the bitter taste.
