  • Place a pan on stove top on medium heat
  • Then add 3 tbsp olive oil.

  • Then add 1/2 tbsp mustard seeds and heat until is starts popping.

  • Then add 1 1/2 cups of finely chopped onions. Stir intermittently and cook until soft.

  • Then add 3 roughly chopped green chilies

  • Then add 1/2 tsp turmeric, 1/2 tbsp chili powder and 1/2 tsp salt (adjust to taste).

  • Add 1/2 cup grated coconut.

  • Stir and mix well.
  • Then add the finely chopped fenugreek (methi) leaves and turn the heat to low. Mix well

  • Cover with lid and let it cook for 2 minutes.

  • Remove lid, stir well and cover with lid again. Cook for another 2-3 minutes.

Notes

  • Fenugreek leaves have a bitter taste so finely chop right before cooking to minimize the bitter taste.
