Heat mozzarella cheese in a microwave safe bowl for 30 seconds. Mix and heat for another 30 seconds to 1 minute. Check to make sure cheese does not turn brown on edges but is a smooth consistency
Take out of microwave and wait for about a minute. Add the egg yolk and fold and mix in with the cheese with a silicone spatula or hand. If using your hands, wet them a bit to prevent the mixture from sticking.
Place on silpat or parchment paper. Take another sheet of parchment paper and flatten with palm of hand or rolling pin. It should be even and around 1/8 of an inch thick.
Refrigerate for at least 4 hours
Potsticker Filling Prep
Heat 1 tsp of coconut oil on a pan and add chicken and cook until halfway cooked.
Add green onions, ginger, garlic, soy sauce, oyster sauce and salt.
Stir into ground chicken and cook until done.
Keep aside
Prepping Potsticker
Remove top parchment layer on potsticker wrapper.
Use a 2-3 inch cookie cutter (or any other round object) to create circles for the potsticker wrapper.
Remove the cheese between the circles and set aside
When removing the wrapper from the silpat or parchment paper, do so as if removing a sticker. You need to be cautious and do it slowly as the wrapper is sticky and fragile.
Flatten the remaining extra wrapper dough between two parchment paper and repeat until most of the dough is used up
Add enough ground chicken to the middle of the circle wrapper so that it can easily be folded in half. Pinch the ends of the wrapper so they stick together. Can use a fork to decorate the ends.
Set aside and continue filling all the wrappers
Cooking Instructions
Take a frying pan and add the remaining coconut oil.
Add potstickers to the pan. Let it cook for about two minutes and flipping over halfway through.
