Quesadillas are a delicious treat that is traditionally high carb due to the flour tortilla that envelops the meat and cheese. Well we are in luck with so many low carb tortilla options now available at almost any grocery store. I used the Mission Carb Smart soft taco size flour tortilla that has only 4g net carbs per tortilla to make this keto chicken quesadilla.

This recipe is easy and convenient with many store bought items. I just cooked up some frozen grilled chicken with additional spices for this recipe and it tastes great.
Keto Chicken Quesadilla Instructions
CHICKEN FILLING
Heat pan on medium and add 2 tbsp olive oil. Then add 4 cloves of chopped garlic, 1 cup chopped onions and 4 green chopped chilies and saute for a minute. Then add 1 tbsp cumin powder, 1 tbsp taco seasoning, 1 tsp salt and 1/2 tbsp lime juice and mix well. Add 1 pound chicken and cook until done. Then add 2 tbsp cilantro. Mix well and set aside. This chicken filling can be used in my keto chicken mexican pizza or keto chicken taco.
Quesadilla
Mix the 2 oz shredded mozzarella and 2 oz cheddar cheese in a bowl and set aside. On a pan on stove on medium heat, warm up tortilla on both sides. Then place 4 oz of chicken on one half of the tortilla. Then add 1 oz of shredded cheese mix on the same side. Fold the tortilla in half so the chicken and cheese mix is in the middle. Then cook for a few minutes and flip so the fold holds it’s shape and cheese starts to melt.
Notes
I used pre-cooked frozen grilled chicken, if you use raw chicken, it will take longer to cook than what is seen in video. You can reduce onions if you want to lower carb count further.

- 1 tbsp taco seasoning
- 1/2 tbsp lime juice
- 2 tbsp oil
- 1 tsp salt - adjust to taste
- 1 cup onions - chopped

- 1 lbs chicken - grilled and chopped in small cubes
Mexican Pizza and Toppings
- 4 tortillas - carb smart
- 2 oz mozzarella cheese
- 2 oz cheddar cheese
- 4 tbsp sour cream
Instructions

Quesadilla
