Maggi noodles are a favorite easy to prepare instant noodles in India. It is common to jazz it up a bit by adding eggs and other spices. It is as popular as Top Ramen or Mac and Cheese in America. The noodles are easily found here in the Indian grocery stores. However, the noodles have a high carbohydrate content and therefore not suitable for the ketogenic diet. I swapped out the noodles with shirataki noodles to make this Keto Maggi Shirataki Noodles. The main ingredient is Maggi Chicken Bouillon which is easily available in any grocery store. I found it in Krogers.

KETO NOODLE ALTERNATIVES
I soon learned of alternatives for rice and noodles. For rice I typically use cauliflower rice and for noodles I use shirataki noodles. If you do not have shirataki noodles, you can substitute with zucchini noodles or zoodles. For this recipe about 2 spiralized zucchinis would work. What are shirataki noodles? They are a translucent traditional Japanese noodles made from the konjac yam. They are mostly composed of water and glucomannan (dietary fiber) and have less than 1g of carbs and very low calories.
WHERE TO FIND SHIRATAKI NOODLES AND HOW TO PREPARE THEM?
Costco has the Healthy Noodle brand that only needs to be rinsed as it does not have the bitter taste that other brands do if not prepped appropriately. It also has a rice noodle consistency that is perfect for Asian inspired noodle dishes. For the other brands I recommend to rinse the shirataki in water for a few minutes. Then put it in boiling water for three minutes. Drain and then dry roast on a pan or skillet. This also gets rid of any excess water and makes a huge difference in taste and consistency of the noodles.
If the Costco option is not available for you, check out Miracle Noodles. I have tried the Miracle Noodles brand and taking the steps of rinsing, boiling and dry roasting make a difference in enjoying these noodles.

Keto Maggi Shirataki Noodles Instructions
Prepare 1 packet of shirataki noodles as per package instructions. Then put pan on stove top on medium heat and add 2 tbsp olive oil. Then add 1/3 cup chopped onions and stir until soft. Next, add 4 chopped green chilies. Then stir and move onions and green chilies to one side of pan to make room to cook eggs. Then add 4 eggs to one side of the pan and cook. Add 1/2 tsp of chili powder and 1/4 tsp salt (adjust to taste). Then stir eggs until cooked. Then add the shirataki noodles. Stir well with the eggs and vegetables. Then add 1 tbsp Maggi Chicken Bouillon. Then add 1/4 cup chopped spring onions. Next add 1/4 tsp turmeric. Mix well.
