I had a sudden urge for cookies and I had a favorite coconut cookies recipe that I used in the past that used all purpose flour and sugar. I decided to experiment and replace the all purpose flour with coconut flour and the sugar with monk fruit sweetener to swap out the carbs and make this recipe low carb and keto friendly keto coconut cookies recipe.

Keto Coconut Cookie Instructions
Preheat oven to 350°F and mix the 2 cups of desiccated coconut, 1 tbsp coconut flour, 1 tsp baking powder and set aside. In another bowl add 6 tbsp butter and 5 tbsp monk fruit sweetener and mix with a hand mixer. Add 1 tsp vanilla extract, 1 egg and 3 tbsp heavy whipping cream and keep mixing. Add the dessicated coconut, coconut flour and baking powder mix and continue to mix in with a hand mixer.
When ingredients are well combined, take a heaping spoonfull of the dough, roll into a ball and flatten. Place on a silpat or parchment paper on a baking sheet. You should be able to make 16 keto coconut cookies that are about 2 inches in diameter and 1/2 inch thick. Bake in over at 350°F for 20 minutes until golden brown in color. When done, let it sit for 20 minutes to cool to room temperature before serving.
Notes
Let it rest for 20 minutes once done cooking in the oven to harden. I put in the refrigerator to speed up the process.
