Keto Strawberry Cheesecake Popsicles

Fruits are known to be high in carbohydrates, so how is it possible to enjoy a strawberry cheesecake popsicle on the keto diet? Some fruits, mainly the ones that end in with “berry” tend to be low carb. This recipe includes 1 cup fresh chopped strawberries and the net carbs for this fruit in the whole recipe is 8.7g. These keto strawberry cheesecake popsicles are absolutely delicious and great to enjoy on a hot summer day. They are also quick and easy to make with a 10 minute preparation time. The hard part is the 4 hour wait until it is ready after putting it in the freezer.

Popsicle molds are ideal for creating these creamy popsicle. If you do not have popsicle molds handy, you can use small plastic cups instead.

Keto Strawberry Cheesecake Popsicle Ingredients

  • 4 oz cream cheese
  • 1/4 cup monk fruit sweetener
  • 1/2 cup heavy whipping cream
  • 1 tsp lemon zest grated
  • 2 tsp lemon juice fresh
  • 1 cup strawberries chopped

  • Place the cream cheese in a blender and process until smooth
  • Then add the heavy whipping cream, sweetener, lemon zest and lemon juice. Blend until well combined.

  • Then stir in the remaining 1/4 cup chopped strawberries

  • Pour the mixture into the popsicle molds and push a stick 2/3 of the way into each mold

  • To take out of the mold, run under hot water for 30 seconds and twist stick gently to release
