These keto strawberry cheesecake popsicles are absolutely delicious and great to enjoy on a hot summer day. They are also quick and easy to make with a 10 minute preparation time. The hard part is the 4 hour wait until it is ready after putting it in the freezer.

Keto Strawberry Cheesecake Popsicle Ingredients
- 4 oz cream cheese
- 1/4 cup monk fruit sweetener
- 1/2 cup heavy whipping cream
- 1 tsp lemon zest grated
- 2 tsp lemon juice fresh
- 1 cup strawberries chopped
Keto Strawberry Cheesecake Popsicle Instructions
- Place the cream cheese in a blender and process until smooth
- Then add the heavy whipping cream, sweetener, lemon zest and lemon juice. Blend until well combined.
- Then add 3/4 cup of the chopped strawberries and blend until smooth
- Then stir in the remaining 1/4 cup chopped strawberries
- Pour the mixture into the popsicle molds and push a stick 2/3 of the way into each mold
- Then freeze for at least 4 hours
- To take out of the mold, run under hot water for 30 seconds and twist stick gently to release
