Keto Chicken Tostada with Crispy Cheese Folio Base

This keto chicken tostada with crispy cheese folio is made with a cheddar cheese folio base when heated in a microwave forms a crispy shell suitable for a tostada. I cooked some ground chicken using taco seasoning and used cheddar cheese and hot sauce for the toppings. If you prefer beef, you can substitute the ground chicken with ground beef.

Cheddar Cheese Folios

The folios are available at Walmart, Costco and other grocery stores that enable to make the crispy cheese folio base. In Walmart they come in a pack of four and in Costco in a pack of eight. At Walmart, I found it close to where they keep the other cheese. At Costco, I found it in the refrigerated section where they have cold cuts and other cheeses. For this keto chicken tostada recipe I used the cheddar folios, but you can use the parmesan folios instead.

The crispy cheese folios are versatile and a must try on the keto diet if you are looking for a crunchy option for tostadas or tacos. There are instructions on the folio package on how to make them crispy. They mention to cook in microwave for 1 minute and add 30 seconds if the folio does not get crispy. In my experience, I have had success with 2 minutes. The key is while it is cooking in the microwave, the whole layer should be bubbling towards the end of the cook time. Then when it cools, it will become crispy. It takes about a minute.

Keto Chicken Tostada Instructions

Chicken

Heat pan on stove top on medium heat. Then add 2 tbsp of olive oil and then add 1/3 cup chopped onions. Stir until soft. Then add 1 tsp garlic paste and stir. Then add 1 lbs ground chicken and stir. Add 1 tsp paprika. Then add 1/4 cup taco seasoning and mix well. Then stir intermittently until chicken full cooked and set aside.

Tostada

Preheat oven to broil on high. Then heat cheddar folio in microwave for 2 minutes on supplied parchment paper. The whole folio should bubble as heated in the microwave. If the middle is not bubbling, heat another 30 seconds in the microwave and repeat until it does. This will allow the whole folio to get crispy as it cools. Wait at least a minute for it to cool before the next step.

Then remove the parchment paper and set aside from the folio and put on 2 tbsp of hot sauce on the top. I used Taco Bell Fire Sauce available at grocery stores, but any hot sauce will do. Then add 4 oz of ground chicken that was cooked earlier. Then add 2 oz of shredded cheddar cheese. Place the tostada on the parchment paper set aside earlier and broil in the oven on high for 2-3 minutes until cheddar cheese is full melted. Take out of the oven and let it cool for few minutes before enjoying!
