This keto kheer recipe uses chia seeds in place of rice to recreate an Indian favorite dessert. Kheer is a rice pudding and the rice and sugar is loaded with carbs that does not work with the keto diet. This recipe replaces the sugar with monk fruit sweetener. This recipe uses heavy whipping cream and almond milk to further reduce the carbohydrates. This makes about 2 cups of kheer split in 8 servings. Each serving is 1.7 g net carbs.

Cracked wheat, tapioca, vermicelli are other alternative to rice that are traditionally used. I decided to use chia seeds for their neutral flavor and consistency that mimics the texture of rice. This recipe turned out delicious and if you are craving kheer this recipe should be your go to option.
Keto Kheer Instructions
In a small bowl put 1/4 cup chia seeds in 3/4 cup of water. Let is soak for at least 15 minutes. Then heat 1 cup of heavy whipping cream and 1 cup of almond milk on pot on stove on medium heat stirring occasionally. Add 1/3 cup monk fruit sweetener. Then, when it just start to bubble add the chia seeds Then stir occasionally until until it bubbles right before boiling. Add 2 tbsp crushed almonds Then add 2-3 strands of saffron. Stir continuously and turn down heat to prevent it from boiling, if needed. Then cook until it starts boiling.
Refrigerate for 30 minutes before serving. Best served chilled.

Notes
- If chia seeds form lumps, use spoon to break them apart by pushing down on them while cooking.
- While cooking, prevent it from getting to boiling by stirring and turning down the heat, if needed.
- Refrigerate for at least 30 minutes before serving.
- Best enjoyed chilled.
