Alfredo pasta served traditionally with pasta is a high carb meal. Swapping out the pasta with zucchini noodles (zoodles) makes it possible to enjoy this delicious keto shrimp alfredo on a low carb or keto diet. Now days, it is possible to get frozen zucchini noodles at the grocery store. When I started keto and was looking for noodle alternatives, I came across many people using a spiralizer to make noodles out of zucchini. I invested in one a while back and have used it extensively to make many noodle inspired dishes.
Shrimp alfredo was always a favorite of mine, and experimenting with zucchini noodles I came up with this delicious shrimp alfredo with zoodles recipe. One drawback to zoodles is the water content tends to get in the sauce. To prevent this from happening, I dry roast the zoodles with salt (about a 1/2 tsp per zucchini) to get the water out.
Dry roast zucchini noodles to draw out excess water
Spiralize two zucchini into noodles (zoodles). Heat pan on stove on medium heat. Dry roast zoodles and add 1 tsp salt. Transfer zoodles out of pan and set aside
Shrimp
On medium heat add 1 tbsp butter to same pan. Add 1/2 pound of shrimp to the pan. Stir occasionally until shrimp is cooked. Then add 1/2 tsp black pepper powder and 1/2 tsp Italian seasoning and mix well. Transfer shrimp out of pan and set aside
Alfredo Sauce
In the same pan, melt 1 tbsp of butter. Then add garlic and stir into butter. Add parsley and stir into garlic and butter. Then add heavy whipping cream and stir. Add black pepper powder and Italian seasoning and mix well. Then add Parmesan cheese and mix well.
Finalizing Shrimp Alfredo with Zoodles
Then add the shrimp and zoodles that were set aside to the alfredo sauce in pan. Mix well and enjoy your shrimp alfredo zoodles!

- 1 tbsp parsley - chopped

Instructions

- Heat pan on stove on medium heat
