The keto uttapam is one of my favorites. It is a savory pancake topped with chopped vegetables and is delicious. The traditional uttapam is a popular breakfast or brunch in South India. Often made with dosa batter it is not keto friendly. Drawing inspiration from keto pancake recipes and making it with an almond flour and coconut milk as the main ingredients in the batter. This recipe is vegan friendly.

Keto Uttapam Cooking Instructions
Uttapam Batter
Whisk in a bowl add 1 1/4 cup almond flour, 1 tsp baking powder, 1 pinch of salt and 1/4 tsp monk fruit sweetener. Then add 1 tbsp olive oil and 1 cup coconut milk. Then mix well.
Vegetables for Keto Uttapam
Then in a bowl mix 1/2 cup chopped onions, 1/4 cup chopped tomatoes, 4 chopped green chilies, 1 tbsp chopped cilantro and 5 chopped curry leaves. Set aside.
Cooking Uttapam
Then heat pan on stove on medium heat. Add 1 tsp olive oil. Then add about 3-4 tbsp of batter on pan. Then top with 1-2 tbsp of vegetable mix. Sprinkle olive oil (1 tsp) around edge of uttapam while cooking. Cook about 1 minute, then flip over. Repeat until all keto uttapam batter is done.
