Keto Fries – Turnip Fries

French fries were one of my favorite foods. I loved to pair fries with a burger. Going low carb on the keto diet I can no longer enjoy french fries due to the high carb content due to the main ingredient being potatoes. I have been seeking an alternative to swap out the potatoes and came across turnips. This is when I thought I would try to create keto turnip fries. Turnips are a root vegetable with a creamy white color and a purple top. A medium turnip has about 5.5g net carbs compared to a medium potato that has 24g net carbs.

I have tried many different attempts to get these turnip fries as close to the original french fry. Attempted deep frying and cooking in the air fryer, but they ended up being soggy. I read that running the turnip under cold water for 20 minutes helps prevent it from ending up soggy. Therefore, I decided to put the cut turnip fries in a bowl with ice water for 20 minutes to prep. I also had best results cooking in a traditional oven at a high temperature for 20 minutes. This is a delicious recipe that gets close to french fries in taste. It does have a mild bitter after taste. To reduce this after taste, it is best to use smaller sized turnips.

Prep Keto Turnip Fries

Preheat oven to 425°F. Cut 2 turnips into french fry shaped pieces. Then put turnip fries in a bowl with ice water and wait 20 minutes. Take the turnip fries out of the ice water and dry between two paper towels. Then place aluminum foil on a baking sheet and brush the foil with oil or non-stick cooking spray.

Cooking Keto Turnip Fries

Place the turnip fries on the aluminum foil in a single layer. Then bake in oven at 425°F for 20 minutes and halfway through flip the turnip fries over. Let it cool a few minutes before serving.

Notes

To reduce the chance of turnip fries being soggy, look for smaller turnips. The step to soak turnips in ice water helps with reducing the chance of the turnip fries to become soggy. These need to be eaten shortly after baking as the longer you wait, they turn soft.
