I have tried many methods to make crispy rutabaga fries. I have deep fried, oven baked and even double fried them. Even though they taste great and remind me of potato french fries, they lack the crispiness that is found in one of my all time favorites that I cannot enjoy on keto.

I had seen some recipes claim using corn starch to make rutabaga fries crispy but I shy away from adding extra carbs to an ingredient that is borderline high on carbs for a keto lifestyle. I thought of using unflavored whey protein powder to lightly coat the rutabaga fries instead of corn starch as I have used it to make keto chicken nuggets and crossed my fingers that this would work. The outcome was delicious.
Crispy Rutabaga Fries Instructions
Cut a large rutabaga into french fry shape. Then in a bowl mix the rutabaga fries with 1 tbsp paprika and 1 tbsp garlic salt. Then add 1/4 cup unflavored whey protien and mix well.
Preheat a deep fryer to 325°F and cook the rutabaga fries for 5-6 minutes. If you do not have a deep fryer, these can be deep fried on the stove. Just be careful with the temperature as the whey protein browns quickly.

- 1 lbs rutabaga
- 1 tbsp paprika
- 1 tbsp garlic salt
- 1/4 cup whey protein powder - unflavored
- 1/2 cup olive oil - amount absorbed by fries during deep frying
Instructions
- Cut 1 large rutabaga (about 1 lbs) into french fry shape
- Then in a bowl add the rutabaga fries and 1 tbsp paprika
- Then add 1 tbsp garlic salt and mix well
- Next, add 1/4 cup unflavored whey protein powder
- Mix well
- Set deep fryer to cook at 325°F
- Deep fry rutabaga fries for 5-6 minutes at 325°F
