Avocado is the fruit of Persea americana or avocado tree. It is extremely nutritious and has a great flavor and rich creamy texture. A single avocado has about 4g net carbs and fits in nicely into meal plans on a keto diet. Avocodo is an ideal ingredient for guacamole with crispy keto cheddar cheese chips.

Keto friendly guacamole is usually served as a dip where avocado is the main ingredients often accompanied with tortilla chips. Unfortunately, tortilla chips are high in carbs and not conducive to the keto diet. Then to overcome this issue I combined my recipe for guacamole with crispy keto cheddar cheese chips. These are simple to make and generally uses shredded chedder cheese baked in the oven to make crispy. This combination is amazing and I hope you try and enjoy it too.

Guacamole
Cut 2 avocados and remove skin and seed and put in bowl. Mash with fork or masher. Then mash the avocado. Then mix in 1/4 cup chopped onions, 2 tbsp chopped tomatos, 3 chopped green chilies and 1 tbsp chopped cilantro. Finally add the vegetables to mashed avocado and mix well.
Cheddar Cheese Chips
Begin by taking a spoonfull of shredded cheddar cheese and place as small round mounds on silpat or parchment paper. Then keep adding additional spoons to make multiple small rounds until all 4 oz of cheese are used. Make sure they are placed apart as they will spread out as they melt. Then place in oven at 400°F for 8-10 minutes. Then remove from oven and let it cool for a few minutes. Finally, use a pizza cutter to slice each round into 2-3 pieces.
