Keto Methi Sabji – Healthy Fenugreek Side Dish

Keto Methi Sabji is a quick and easy Indian side dish that has fenugreek leaves as the main ingredient along with its many health benefits. Fenugreek has been shown benefits such as lowering blood sugar levels, boosting testosterone and increasing milk productions in breastfeeding mothers. Keto Methi Cooking Instructions

First, place a pan on stove top on medium heat. Then add 3 tbsp olive oil. Then add 1/2 tbsp mustard seeds and heat until is starts popping. Add 1 1/2 cups of finely chopped onions. Then stir intermittently and cook until soft. Next, add 3 roughly chopped green chilies. Then add 1/2 tsp turmeric, 1/2 tbsp chili powder and 1/2 tsp salt (adjust to taste). Then add 1/2 cup grated coconut. Stir and mix well. Then add the finely chopped fenugreek (methi) leaves and turn the heat to low. Mix well Then cover with lid and let it cook for 2 minutes. Then remove lid, stir well and cover with lid again. Cook for another 2-3 minutes. Fenugreek leaves have a bitter taste so finely chop right before cooking to minimize the bitter taste. Then enjoy your keto methi sabji.

Notes
