Keto Spicy Chicken Sandwich Chick-fil-A style

The keto spicy chicken sandwich is a low carb keto friendly version of the Chick-fil-A version. I have made this with the marinade Chick-fil-a uses and the same spices. This came out as a delicious version of the classic without the carbs. The secret of the marinade is to use pickle juice and the crispy coating was accomplished using spices mixed in with unflavored whey protein. There are many options for buns. Keto Spicy Chicken Sandwich Instructions

Marination

In a bowl mix 1/4 cup pickle juice, 1 tsp chili powder and 1 lbs boneless chicken thighs. Then refrigerate for at least 30 minutes.

Coating and Deep Frying

Preheat deep fryer to 325°F. In a bowl mix 1/2 cup milk and 1 large egg. Then in another bowl mix 3/4 cup unflavored whey protein, 1/2 tsp baking powder, 1 tbsp chili powder, 2 tsp paprika, 1 tsp black pepper powder, 1/2 tbsp monk fruit sweetener and 1/2 tsp salt. Then take a marinated chicken thigh and dip into bowl with milk and egg.

Next, dip into spiced protein powder mix to coat. Then use tongs and push the chicken on top of protein powder and sprinkle powder from top. Then flip over and repeat pushing down and sprinkling from top until chicken is well coated. Finally place the chicken thigh into the deep fryer and cook at 325°F for 6-8 minutes.

Wait a few minutes and serve as a sandwich on keto friendly bread of choice.

NOTES

  • When coating the chicken, it is easier to use tongs as the protein powder gets sticky when using hands.
  • Method to coat chicken, place on top of protein powder mix in shallow bowl and push down.  From top sprinkle protein powder.  Flip chicken piece over and repeat until chicken piece is evenly coated. 
  • Once coated, put immediately into deep fryer as the protein powder soaks up liquid if set aside for too long.
  • Make sure deep fryer is set to 325°F and not higher temperature as the protein powder tends to cook fast and want to make sure coating and chicken cook evenly.
  • The boneless chicken thighs take about 6-8 minutes to cook.  
  • The center of the chicken should reach 165°F to be at safe temperature to eat.
