Fried rice was a favorite for me prior to transitioning to the keto lifestyle. Obviously being composed primarily of carbohydrate rich rice, this was out of the questions. However, riced cauliflower has been a savior to replace many of my favorite rice dishes with keto friendly versions. This keto egg fried cauliflower rice recipe is one of my favorites and is quick and easy to make. This pairs well with my keto chili chicken recipe.

Keto Egg Fried Cauliflower Rice Instructions
Heat pan on stove top on medium heat. Then add 2 tbsp of olive oil. Then add 1/2 cup chopped onions. Stir and cook until soft. Then add 1/4 cup chopped red bell peppers and stir. Then add 1/2 tsp of salt (adjust to taste) and move vegetables to one side to make room to cook the eggs. Next, add 1 tbsp olive oil and 4 eggs to pan on the opposite side of the vegetables. Then add 1 tsp black pepper powder and 1/2 tsp salt. Then mix and cook eggs. Next, on the vegetable side add 2 tbsp black pepper powder, 1 tbsp vinegar, 1 tbsp soy sauce, 1 tbsp fish sauce, 1/2 tsp garlic paste and mix well. Then mix well with the cooked eggs. Then add 1 lbs cauliflower rice and mix well. Finally, add 1/4 cup of spring onions and mix well to enjoy this keto egg fried cauliflower rice.

- 1 lbs cauliflower - rice
- 3 tbsp olive oil - divided 2 tbsp & 1 tbsp

- 1/4 cup spring onions - chopped
Instructions
