However, there are many options using coconut flour and almond flour. I prefer coconut flour for desserts as the flavor is less nutty compared to almond flour. Another plus for coconut flour is that it is highly absorbent and less is needed cutting down the total calories. For sweeteners I prefer monk fruit sweetener which is a zero carb and calorie sweetener. Any erythritol based sweetener will do as these do not produce insulin spikes like some other artificial sweeteners such a sucrolose or aspartame.
This keto minute mug cake recipe is easy, quick and the outcome is delicious. Start with a mug or small bowl and melt 1 tbsp of butter, add 1 tbsp coconut flour, 2 tbsp monk fruit sweetener, 1 tsp baking powder, 1 tsp vanilla extract and 1 large egg. Then mix together well until it resembles cake batter. Then cook in the microwave for 1 minute. Serve with whip cream or low carb ice-cream if you wish.

- 1 tbsp butter - unsalted
- 1 tbsp coconut flour
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp monk fruit sweetener
- 1 egg - large
- Melt butter in microwave safe coffee mug or small bowl for 30 seconds
- Add coconut flour, vanilla extract, baking powder, egg, and monk fruit and mix in with butter until a smooth consistency
- Put back in microwave and heat for one minute
- Give it a few minutes to cool and enjoy!
