The traditional options to satisfy dessert cravings are usually made with sugar and have a lot of carbs. It is not impossible to curb these cravings on the keto diet with the sugar and flour options that are out there. One of these options is the Keto Chocolate mug minute cake.

However, there are many options using coconut flour and almond flour. I prefer coconut flour for desserts as the flavor is less nutty compared to almond flour. Another plus for coconut flour is that it is highly absorbent and less is needed cutting down the total calories. For sweeteners I prefer monk fruit which is a zero carb and calorie sweetener. Any erythritol based sweetener will do as these do not produce insulin spikes like some other artificial sweeteners such a sucrolose or aspartame. If you want to use almond flour replace the 1 tbsp coconut flour with 3 tbsp almond flour.

This keto chocolate mug minute cake recipe is easy, quick and the outcome is delicious. Melt 1 tbsp of butter and set aside. Then in a mug or small bowl mix the dry ingredients by adding 1 tbsp coconut flour, 1 tbsp cocoa powder, 2 tbsp monk fruit sweetener, 1/2 tsp baking powder. After it is well mixed add the 1 tbsp melted butter, 1 tsp vanilla extract and 1 large egg. Then mix together well until it resembles a chocolate batter. Then cook in the microwave for 1 minute. Serve with whip cream or low carb ice-cream if you wish.

  • Melt butter in microwave safe bowl for 30 seconds and set aside
  • Add coconut flour, cocoa powder, baking powder and monk fruit sweetener into a coffee mug or small bowl and mix until dry ingredients are well combined
  • Add the melted butter, vanilla extract and egg and mix until it resembles a chocolate batter
