Zucchini Chips

Zucchini is also known as green squash. It has a mild flavor and it is a versatile ingredient. In addition, 1 medium zucchini is about 30 calories with only 4g net carbs. This makes it a great option on any keto or low carb diet. I have used it to make zucchini chips and also have used it to make zoodles. Zoodles are made using a spiralizer and turn your zucchini into noodles.

Zucchini does have significant water content, so to prevent creating soggy zucchini chips a few steps need to be taken. I lightly toss the sliced zucchini with salt, let it sit for 10 minutes and lay it out on a paper towel. I then use a second paper towel to apply pressure and squeeze that water out.

The thickness of the slices also makes a difference in how these come out. Cut it too thin and it will fly all over the air fryer. I cut it to be about 1/8 inch thick. I leverage a mandolin slicer to make it easy, but it can be accomplished with a cutting board and sharp knife.

Zucchini Chips Instructions

Cut 1 zucchini into 1/8″ slices. Then place in bowl and mix in 1 tbsp salt. Then place zucchini slices in single layer on paper towels and let rest for 30 minutes. Take another paper towel and apply pressure on top of zucchini slices to draw out more water and set aside. Then in a bowl add 2 tsp grated parmesan cheese, 1 tbsp garlic powder, 2 tsp chili powder, 1 tsp Italian seasoning, and 1 tbsp olive oil and mix well. Then add the zucchini slices to the bowl and mix well with the seasoning. Place seasoned zucchini slices in a single layer into air fryer. Then cook in air fryer at 400°F for 10 minutes. Enjoy!

Notes

  • Alternatively can be cooked in oven at 425° for 30 minutes flipping zucchini slices halfway
